Frittata is an Italian dish ~ Made with eggs, meat, cheese and vegetables.
1️⃣ Use an nonstick oven-safe or cast iron skillet. Make sure to grease well as you'll be placing it in the oven afterwards. 2️⃣ Line the pan with vegetables. I used:- 1 tomato - sliced - 1 onion - sliced- 2 green chillies - chopped (optional) You can also add steamed potatoes and green pepper. 3️⃣ Then add meat. I used mortadella. You can use anything from salami, polony, or viennas even. Make sure to fry any meat that needs frying first before using it. 4️⃣ Now add grated cheese as the third layer. 5️⃣ Then mix 5-6 eggs with ¼ cup cooking cream in a separate bowl and pour over the cheese. 6️⃣ Top with parsley and spring onions. 7️⃣ Cook for a few minutes on the stove - until the eggs at the edge of the pan begin to set. (I skipped this step and the eggs still cooked well) 8️⃣ Then bake in the oven on 180° for about 10-12 minutes or until the eggs are done. 9️⃣ Allow to cool a bit then cut in wedges and serve with toast.
