Pastry 1 and ¾ cup flour2 teaspoon baking powder 2 teaspoon sugar Pinch of salt 125g butter 3 egg yolks Sift dry ingredients together. Grate butter and add to flour and make like bread crumbs. Add yolks to form dough.Refrigerate for about 15 minutes.Filling ¾ cup sugar 2 cups coconut 3 egg whites 8 tablespoon apricot jam Beat egg whites till stiff. Add sugar and coconut. Roll out pastry and cut with a flower cutter and place into greased patty pans.Brush with jam and add filling. Place cherry on top and bake at 180 for about 15-20 minutes.
