150ml water 50 g butter 75 g flour Pinch of salt 2 eggs lightly beaten *Cream filling ½ pint whipping cream (whipped until stiff) *Chocolate sauce Melt over gentle heat100 g plain chocolate 2 tablespoon golden syrup 2 ounces butter
Put water and butter in saucepan and gently boil until butter melts, then bring to a rapid boil. Remove from heat and quickly stir in the flour and salt until mixture leaves the side of the pan. Allow to cool slightly. Beat in the egg little at a time until smooth and glossy. Spoon teaspoon size on baking tray. Bake in oven gas 6 until well risen and golden color. Cool .. split each and fill with cream. Pour chocolate over the profiterole.
