FIRST MAKE KASTA :-1 liter Mlik3 tablespoon white vinegar• Heat up Mlik boli then add vinegar stir until the water is separated from the milk curds, remove the Mlik curad & set a side on a strainer.½ liter Mlik2 tablespoon sugar2 tablespoon rose water¼ cup corn starch• Whick together once the starch is dissolved place over medium heat, continue whisking until the sauce is thickened then add the Mlik curad to the still hot mixture whisk until on lumps have discovered ( u can use hand blender for smooth consistency) pour into a bowl, cover allow to cool for few hours.
SUGAR SYRUP :-3 cup sugar2 cup water1 teaspoon rose waterLemon juice• Boli syrup until is thickens. Let it cool downFOR THE FALLING :-2 cup walnuts (roughly crushed)6 tablespoon coconut powder1 tablespoon cinnamon powder4 tablespoon sugar powder2 tablespoon rose water2 teaspoon ghee (Clarified butter)• Mix well, keep a side
QATAYEF BATTER :-2 cup flour½ cup semolina2 teaspoon baking powder2 tablespoon sugar1 tablespoon Yeast3 cup warm water• Mix well then pour in a blender, blend until 20 seconds, pour into a bowl cover and allow to rise for 30 minutes. After rise mix well.• Wipe a nonstick pan with little oil pour about ¼ cup of batter, ( the qatayef will start bubbling make sure that you get loads of bubbles coz if not it means that u don't make right consistency, fix with water) when the top is dry removed from the pan, Place a kitchen towel cover, otherwise they will dry out really quickly which can lead to difficult to fold and seal.• Stuff qatayef with the falling, then deep fry or bake in oven once they done inmediately add in to cool syrup.
