INGREDIENTS
Preheat your oven to 180°Prepare your tin by spraying thoroughly with spray and cook.
3 jumbo eggs2tblsp sugar 1 teaspoon vanilla essence ½ teaspoon cream of tartar Pinch of salt ½ cup flour 1 teaspoon baking powder
METHOD
1. Sift the salt, flour and baking powder in a small bowl.2. Separate the eggs3. Whisk the egg whites and cream of tartar together until you have a fluffy meringue 4. Beat the egg yolks and vanilla together until pale.5. Combine the whites and yolks and fold in the batter.
Fill your tin and bake for 8 minutes
Allow to cool then fill
Filling 2 egg whites 3 tablespoon water3 tablespoon sugar 1 teaspoon vanilla
Combine the above over a double boiler and cook until the sugar melts. Whisk this mixture until it forms peaks (refer to my pic)Cool and pipe into Tinkies
