Butcher cut cleaned 6 x Lamb Trotters in 6 cm pieces PREPARATIONTake salt and bicarb and rub each pieceThen soak it in vinegar water for 10 minutesRince and drain thoroughlyI use the Pressure potAdd all the paya (trotters) to the pot add with1 Heaped tablespoon Ginger Garlic paste1 teaspoon tumeric Cinnamon sticks Cloves AniseedAdd 1 litre water Boil for 45 minutes drain and throw away that water THENAdd the paya (trotters) again to the pot with more water with all the spices and little Ginger Garlic Boil till soft +- 1 hour and the meats almost falling off the boneREMOVE ALL THE SPICES KEEP ASIDEIF ADDING DHALSUse approximately 2 cup of Pea dhal (or mix Pea and Chana Dhal) Chana dhal) BOIL with 1 teaspoon tumeric add pinch of hing boil till soft and mushy beat or process till smoothKEEP ASIDEIn a Pot add very little Oil /ghee (Clarified butter)Add 1 large sliced onionLittle whole Jeeru (Cumin), Elachi (cardomom) podstuj (cinnamon stick), Curry leaves, Aniseed and 2 whole Green chilli or Red ChilliBraise till onion is gold in colourThen Add 1Tblsp ginger garlic paste½ teaspoon Crushed Garlic or sliced garlic+- 2 tablespoon Shans paya (trotters) spice or any brand 2 Level teaspoon Dhana Jeera mix (Don't Over spice) +- 1 teaspoon tumeric again+- 1 teaspoon Durbs masala1 teaspoon Green chilli pasteBraise add All the paya (trotters) Braise till spices are well mixed then add2 Medium liquidised Tomatoes Braise well (Optional: if you adding Dhals : Lastly add the Boiled dhal) Braise again ThenAdd water and cookBefore done add 1 teaspoon Garsm Masala till doneThen make wagaarFor the Tempering / Wagaar:Braise little ghee (Clarified butter) with whole jeera and little onionPour over Cooked paya (trotters)And green chopped dhania (coriander) and shallot MintEnjoy with Roti😋

I boil for long so that the Trotters are very soft
