Use any yeast doughThis one never fails me though.
Keep125 g butter or ghee (Clarified butter) melted separately to spread on the rotis
2 and ⅓ cups warm water1 packet instant yeast1 teaspoon salt3 tablespoons sugar3 tablespoons oil or ghee (Clarified butter)Mix all above and leave to stand besides the 125g butter, covered for 10 minutes, until you see bubbles on top.
Add 5 cups cake flourKnead well Cover and leave to rise in a warm place, at least an hour or so.
Make 10 equal sized balls1st roll out 5Rub each generously with the butter until its covered with it then add another, do the same, just dont rub the 5th one, now do the other 5. Leave to rest 10 minutes,Roll out 1 big circle, and cut like how I did in the picture, you can cut bug or small ones, your choice, you can make the slits if you want as well.
Coconut filling:2 cups coconut 1 teaspoon freshly ground Elachi (cardomom) 1 tin condensed milk , mix well, this filling covers for all the croissants you're making.1 tablespoons per croissants Pack them in a pan and leave space for rising and spreading in oven.You can brush with egg and sprinkle 1000's on a fewDust others with icing sugar
