1 cup fine cornmeal/polenta- grind in coffee grinder if too coarse1 cup flour 1 teaspoon baking powder½ teaspoon bicarbonate of soda ¼ teaspoon salt ½ cup butter, melted ⅓ cup brown sugar2 tablespoons honey1 egg1 cup milk1 tablespoon lemon juice
Add all the dry to a large bowl and whisk together.Now mix all the wet ingredients in a small bowl and add to above. Mix lightly.Tip into (9x5 inch) loaf pan that has been lined with baking paper. Bake in a well preheated oven on 180° Celsius for 30-35 minutes or until golden and cooked through. Serve with butter and honey.
