We had some veggies in the fridge that was quickly passing its prime and what better way to use it up than to make a frittatta?
She sauteed onions, mushrooms and sweet peppers. Seasoned with salt, pepper, garlic, green chillies and Italian herbs.
Mix together in a bowl 8 eggs , 1 teaspoon baking powder, 1/4cup fresh cream, some cream cheese we had leftover, grated Gouda and chopped baby spinach. Pour into veggies and allow to cook for 3-4 minutes. Then transfer to a pre heated oven and bake until just set.
It was so delicious and great for a quick weeknight supper.
You can add any veggies you have on hand and even maybe sausage, polony, salami..
