INGREDIENTS
oil500g Sausages 1 onion, diced1 red pepper, thinly sliced2 garlic cloves, crushed3 whole chilles1 tablespoon Cajun seasoning250g rice3 medium tomatoes chopped350ml chicken stock
METHOD
1. Steam Sausages. Allow to fry then cut them up
2. Take a clean frying pan, add oil and fry onions till soft
3. Add red pepper, crushed garlic cloves,and Cajun seasoning, and cook for 5 minutes more.
4. Stir the sausages back in with 250g rice, add the chopped tomatoes and 350ml chicken stock. Cover and simmer for 20-25 minutes until the rice is tender.Fluff the rice up then sprinkle with black pepper
