INGREDIENTS
100g Rice Flour1 teaspoon Baking Powder75g Butter (or plant butter)75g Caster sugar1 tablespoon Milk (or plant milk)2 teaspoon Vanilla extract4 teaspoon Wateroil, for tray
METHOD
190°CPre-heat the oven.Rub some oil around the inside of a large baking tray or insert a baking liner. Put the flour and baking powder into a bowl and stir to combine.Cut the butter into small cubes and put them into a mixing bowl.Add the sugar to the mixing bowl and beat until smooth.Beat in the milk and vanilla extract.Add the prepared flour and mix well.Stir in the water to make a soft dough. If very soft chill the dough for 10 minutes.Divide the mixture into 24-30 pieces and roll each into a ball.Transfer the dough balls to the prepared baking tray, flattening them slightly.Bake for 20-22 minutes.Leave to cool on the tray for 5 minutes then transfer to a rack to cool. Store cold biscuits in a tin.
