INGREDIENTS
1 large onion1 tomatoFew tablespoons mint1 small green chilli (put half if you prefer milder)Salt & pepperVinegarLemon juice
METHOD
1. Chop the onion. Chop the tomato. Cut the green chilli very finely and mix everything together.
2. Add salt, pepper, few tablespoons vinegar and a squeeze of lemon juice to taste. Chop mint and add. Mix everything together.
3. Allow to stand for few hours before serving for the best flavours.
INFO & TIPS
Sometimes I leave out the vinegar.
You can add chopped cucumber. Makes a delicious addition.
