Add to a pressure cooker500g leg mutton1 tablespoon gingergarlic pasteSalt to taste2 bay leaves1 teaspoon paprika½ teaspoon tumeric2 tablespoon homemade biryani masala (posted in reels)1 litre water
Or grind together a mix ofCoriander seedsCumin seedsPeppercornsCardamomNutmegClovesCinnamon1 star aniseBay leaves
Once meat is tender remove and break into small pieces
Use the stock for the rice.Bring to boil
Measure stock to 4 cups, if its less add more water to make 4 cups.
Add rice with salt to taste and a little saffron water....( crush saffron and add hot water and mix) and cook until rice is done.
Layer rice in a dish and top with meat.
In a pan , Heat ¼ cup ghee (Clarified butter) and fry 15 chopped almonds. Top the rice with the ghee (Clarified butter) fried almonds
