Recipe adapted from one of Jamie Oliver's creations.
INGREDIENTS
4-6 tablespoons butter4-6 eggs1 onion, sliced3 tomatoes, quartered1 punnet mushrooms, sliced1 packet viennas, cut into chunks1 packet cheese russians, cut into chunks3 cloves garlic, crushedsalt to tasteyour favorite seasoning
METHOD
In a large pan, heat butter until it just begins to sizzle. Fry viennas and russians until lightly browned. Add vegetables and cook for about 4 minutes or until they begin to wilt.Add garlic and seasoning and stir.Make little pockets in between the mixture to break the egg in, one at a time. Be careful not to break the yolk. Season again.
Close the pan tightly with the lid and lower the heat. Cook until the eggs are set, about 5 minutes. Serve with ciabatta or garlic rolls.
