INGREDIENTS
250g butter
1½ cups castor sugar
3XL eggs
1 teaspoon vanilla
3 cups flour
3 teaspoon baking powder
1 cup milk
Mock icing
125g butter
½ castor sugar
4 tablespoon boiled water
4 tablespoon milk
Few drops vanilla essence
Apricot jam
Dessicated coconut
METHOD
Cream butter and sugar well, add eggs one at a time, beating well after each addition. Add vanilla essence. Add dry ingredients alternatively with milk.Pour into pans and bake at 180 for +- 20 minutes.Roll in soft apricot jam and desiccated coconut. Slit and pipe mock icing/fresh cream.
Mock icingBeat butter and sugar very well. Add in water gradually. Add milk when mixture is light and fluffy.Vanilla must be added in last.
INFO & TIPS
Warm apricot jam in microwave for a few seconds to make soft, if not soft enough then add a few drops of boiled water.
Be careful when rolling cakes in jam as cakes are very soft.
