Base 125g butter ½ cup castor sugar 1 teaspoon vanilla essence 1 egg 1 teaspoon baking powder 1-1 ½ cup cake flour or as needed.
Beat butter, vanilla and castor sugar till smooth. Then add in eggs. Fold in baking powder and sifted cake flour. Don't make dough too hard. Roll out a large circle about 32cm on wax paper. Cut out edges with a pastry cutter. Pick with a fork, place on tray and bake at 170°C for 15 minutes. Depending on your oven. Cool completely. Biscuit Base can be made 2-3 days ahead. Fill pizza 3-4 hours before serving.
For chocolate topping: Spread nutella on. Whip fresh cream and pipe on top of nutella. Decor with flaked almonds, fruit, chocolate curls or for kiddies astros, smarties, sprinkles or confetti also look great.
Whipped cream topping: Whip 250ml fresh cream with 2 tablespoon icing sugar. Decor with fresh fruit, nuts or chocolate
Cream cheese topping 125ml whipped cream 125g cream cheese ⅓ cup icing sugar 1 teaspoon vanilla essence 1 teaspoon lemon juice Fresh fruit of your choice
Glaze for fruit 1 full tablespoon apricot jam ¼ cup hot water. Combine till smooth Brush over fruit.
