INGREDIENTS
2 tablespoons butter
375g brown sugar
6 tablespoons water
6 cups popcorn
METHOD
Tightly line a baking tray with tin foil.
Melt butter over a medium heat and add the sugar and water. Stir
constantly until the sugar is dissolved, bring the mixture to the
boil. Cover and cook for about 3 minutes, there will be no sugar
crystals on the side of the pot at this stage, do not stir.
To test that you have the right consistency, drop a little of the
mixture into cold water off a spoon and it should immediately
form a ball. If not, cook for another minute or 2.
Remove from the heat, add the popcorn and stir gently to coat
evenly. Pour out onto a baking tray and separate when cool enough
to handle.
Dig in.
