RECIPE
500 ml double thick yoghurt or maas1 teaspoon dhana jeera 1-2 teaspoon ground green chilliGreen dhania (coriander)+-1 teaspoon tumeric ( optional)½ teaspoon sugar ( optional to.cut a bit of the sourness)3-4 tablespoon chana flour (gram) add more if necessary to thicken (Make paste with little water)Liquidise all the above together
In pot melt 3-4 tablespoon ghee (Clarified butter) or ButterAdd 1 teaspoon whole Jeeru (Cumin)½ teaspoon mustard seedsFew curry leaves1 whole green chilliBraise with ½ sliced onionBraise till onion is golden in colourAdd all the liquidised yoghurt mixtureCook on med heat whilst beating with egg beater to smoothen the mixtureCook till a nice custardy consistencyMake wagaar againWith ghee (Clarified butter) little whole Jeeru (Cumin) and onionGarnish with green dhania (coriander) againEnjoy with Kitchri
Kitchri1 cup rice½ teaspoon tumeric3 tablespoon crushed moong dhal (green pea lentil) Boil till all cookedWash and drainMake wagaar with ghee (Clarified butter)Little onions..and whole jeeraPour wagaar over the ricesteam.in oven for 15 minutes
Aloo Fry3-4 thinly sliced potato roundsHeat ¼ cup oil in pan add1 teaspoon whole jeera( optional add mustard seeds)Then add your sliced potatoes1 teaspoon tumeric1 teaspoon crushed or fine red chilli( optional: green crushed chillies)1 teaspoon salt to tasteCook on low till potatoesAre soft and cookedYou may garnish with green dhania (coriander)
Cube pumpkin or butternut aboveIn pot add little oil about 4 tablespoonAdd 1 onion sliced sauteAdd 1 teaspoon whole jeeraAdd 1 teaspoon whole mustard seeds (Rye (black seed))Few garlic cloves2 torn up dry red chilliFry till mustard spluttersAdd the pumpkin or butternutAdd 1 teaspoon salt1 tablespoon Sugar1 level teaspoon dhana jeera pwdr (optional)½ teaspoon tumericCook on low till the pumpkin or butternut is soft and spices well blended and cookedGarnish if u want with green dhania (coriander)
Spinach/Wara/ Red bhaji (Spinach)1 Bunch chopped spinachIn pot heat 4 tablespoon oil..add½ sliced onion. .saute.add torn up 2 red whole dry chillies..3 garlic cloves Salt to taste and ½ chopped tomato.Cover with lid cook on low till spinach is cooked soft..add water if necessary
