INGREDIENTS
250g butter
¾ cup sugar
1 cup coconut
3 cups cake flour
2 teaspoon baking powder
125ml castor sugar
½ teaspoon salt
4 eggs-separated
apricot jam
METHOD
Cream butter & sugar. Beat in yolks.
Add sifted flour & baking powder. Roll
out dough & cut into rounds. Place in
patty pans. Place a little apricot jam
in each. Whip egg whites till dry, beat
in castor sugar & coconut. Cover jam
with this mixture. Bake @ 180*C for 12-
15 minutes.
