Butternut Curry - Mom's Recipe

INGREDIENTS

- 1 onion cubed
- 2 dried red chillies
- 1 piece garlic
- 1 teaspoon whole jeera
- ½ teaspoon mustard seeds
- 1 teaspoon salt
- 2 teaspoon sugar

METHOD

2. when mustard seeds begin to pop add onion and red chillies
3. when onions are translucent add butternut and turn down the heat to medium
4. add salt and sugar
5. summer until butternut is soft

INFO / TIPS

you shouldnt require any water. it will make the veg become too mushy whereas it should retain its integrity. also, stir gently from the bottom so as not to mash the butternut and dont stir too often.

once ready, it should have a slight glaze and be soft but not broken into pieces.

serve as a side dish with roast or tin fish chutney or with braai or as a main dish with pap or mielie rice or white bread and fried meat.
