Moroccan Inspired Lamb And Veggie Couscous / My Recipe

INGREDIENTS

marinate in :
1 teaspoon garlic
1 teaspoon ginger
1 teaspoon red chilli paste
1 teaspoon jeera powder
1 teaspoon dhana powder
1 teaspoon black pepper
½ teaspoon cinnamon powder
2 tablespoon lemon juice
1 teaspoon steak and chops spice
salt to taste
2 tomatoes chopped
Veggies :
¼ pumpkin or butternut
3 sweet potatoes or 1 big ( peeled )
2 carrots (peeled )
1 zucchini
handful dhania (coriander) with stems just washed not chopped
2 cups couscous
water
salt

METHOD

I added the marinated mutton to a pressure cooker along with the tomatoe sand approx 2 to 3 cups water , approx 4 whistles .
veggies :
In the meantime chop the veggies lenghtwise added them to a pot with some water and steamed them ¾ way done . start removing which ever veggies ¾ way done and repeat until all ¾ way done .
Now in the same pot as the cooked mutton add water if there isnt water, add the ¾ way done veggies along with the fresh dhania (coriander) and cook on meduim heat , as the veggies starts to soften remove them you dnt want them to break I the mutton .
remove all the dhania (coriander) and discard . do not burn out all the water from from mutton . add 1 sachet tomato paste and cook for 5 minutes .
couscous :
cook the couscous as per box instructuction just before serving .
I added 2 cups in a deep bowl added 2 ½ cups warm water closes with cling and allowed for couscous to puff . add more water if need be , add salt and using a folk seperate the grains .
assemble :
add couscous at the bottm add mutton on top with most of the broth , add veggies to the side and serve the remaining broth in a small bowl you can pour in your plate is desired
I cold not fins zucchini at this time but do add the zucchini its yummy
