2 slices fresh white bread
2 extra large eggs (room temp) ghee (Clarified butter) Salt Nando's chip spice/ chilli powder Baby plum tomatoes Fresh coriander1. Heat ghee (Clarified butter) in a pan.
2. Make an indentation with fingers in the center of bread, not making a hole all the way through. 3. Crack egg into a cup. Separate yolk from white. 4. The pan should be really hot before placing bread in. 5. The bread will sizzle and start to crisp up when placed in. 6. Quickly pour egg white onto bread and quickly but gently pour yolk into the dent in center of bread, make sure not to break the yolk. 7. Fry egg as desired (runny or hard yolk) by spooning over the hot ghee (Clarified butter). 8. When done, remove with spatula and season whilst hot. 9. Slit few tomatoes in half. Sauté in same pan for 2 minutes with little salt & pepper. 10. Remove from heat and serve with egg. BACK TO RECIPElb / pounds |
