White Sauce Chicken Pasta
Rec & Pic cred: @mama_taught_me_well INGREDIENTS: 500g pasta of choice 500g chicken fillet (stripped/cubed) 2 tablespoon oil 1 teaspoon ground green chillies 1 tablespoon garlic paste 1 teaspoon fine salt (to taste) 1 teaspoon lemon pepper 1 teaspoon coriander powder 1 teaspoon cumin powder 1 teaspoon dried oregano 1 tablespoon lemon juice 3 carrots julienned/grated 2 cups frozen corn 1 green pepper (julienned) (Optional-sliced mushrooms) Sauce- 60g butter 1 liter milk ¼ cup flour Salt and pepper Garnish- Dried mixed herbs Freshly cracked black pepper METHOD: 1. Heat oil in a pan, add in garlic, chillies, spices, lemon, chicken & veg and cook until chicken is just done. 2. Boil pasta in oiled and salted water until al-dente. Leave aside with 1 ladle of pasta water. 3. For the sauce, melt the butter. 4. Whisk in the flour. Gradually pour in milk, whisking all the time, till a smooth paste. 5. Pour in remainder milk, whisk together and allow to come to a simmer and thicken. 6. Once the sauce has thickened, season with salt and pepper. 7. Add the boiled pasta, cooked chicken & veg & pasta water to the sauce. 8. Mix well and heat together. 9. Garnish with black pepper & herbs. 10. May add cheese ontop and pop in the oven to melt.
