INGREDIENTS

½ cup oil
¾ cup castor sugar
¼ cup semolina
1 egg yolk
2 cups flour
½ teaspoon bicarbonate of soda
½ teaspoon baking powder
2 teaspoon Elachi (cardomom) powder
¼ teaspoon nutmeg

METHOD

Boil ghee (Clarified butter) and oil together. Let it cool completely.
Beat sugar and ghee (Clarified butter) mixture for 10 minutes.
Stir in semolina and yolk and beat again for 10 minutes.
Add rest of ingreds to form soft dough.
Shape into small balls and place on greased baking sheet.
Bake till fully cracked.
Lower heat to 180ºC and bake further till golden.
Switch off oven and leave in oven for further 10-15 minutes.

INFO / TIPS

I used a pinch of bicarbonate of soda and not 1/2 tsp.
Let the balls get naturally flattened in the oven
Nutmeg is optional.
