INGREDIENTS

1 ½ cups sugar
3 tablespoon cocoa
1 ½ teaspoon bicarb
1 teaspoon baking powder
pinch salt
2 large eggs
1 ½ cups oil
1 cup buttermilk
1 teaspoon vanilla essence
1 tablespoon vineger
red food colouring / the gel color in red
Icing ;
1 tub cream cheese
125g butter
½ to 1 cup icing sugar

METHOD

Line paper cups in the pan or grease a round cake tin if you making 1 big cake ( aprox 23 to 25 cm )
Sift together the first 6 ingredients
Beat together the eggs and sugar until fluffly add all the remaining ingredients beat just until well combined add the flour to this mixture and beat just til combined . pour in baking tin . or 1 soup spoon batter in each cupcake holder and bake for 25 minutes or until done
ICING :
beat togther the butter and sugur and add soften cheese cheese beat until combined .
when cakes are cooled completely decorate as disired
