makes about 8 waffles (Angela day recipe)
500 ml flour 15 ml baking powder 3 ml salt 10 ml sugar 2 extra large eggs 90 g butter melted 250 ml buttermilk or 300 ml milk for a crisper waffle topping: 60g butter 60 ml light brown sugar 80 ml fresh orange juice 5ml finely grated orange rind 6 ripe bananas peeled and cut 2 ml ground cinnamonsift dry ingredients together. add remaining ingredients and beat until smooth.
rest batter for 30 minutes( mixture should be thick). heat waffle iron and spray or brush plates to grease. pour in batter to cover 2/3 of the iron. close and wipe excess away. cook for 3-4 minutes until light brown and serve with syrup, ice cream or any other fruit topping of choice. topping: heat butter in a frying pan, add sugar and stir until melted. add the orange juice & rind and bananas to pan and cook for about 3 minutes. sprinkle cinnamon over bananas and serve with waffles and ice cream. zaakirah BACK TO RECIPElb / pounds |
