INGREDIENTS

500 ml flour
15 ml baking powder
3 ml salt
10 ml sugar
2 extra large eggs
90 g butter melted
250 ml buttermilk
or 300 ml milk for a crisper waffle
topping:
60g butter
60 ml light brown sugar
80 ml fresh orange juice
5ml finely grated orange rind
6 ripe bananas peeled and cut
2 ml ground cinnamon

METHOD

rest batter for 30 minutes( mixture should be thick).
heat waffle iron and spray or brush plates to grease. pour in batter to cover 2/3 of the iron. close and wipe excess away.
cook for 3-4 minutes until light brown and serve with syrup, ice cream or any other fruit topping of choice.
topping: heat butter in a frying pan, add sugar and stir until melted.
add the orange juice & rind and bananas to pan and cook for about 3 minutes.
sprinkle cinnamon over bananas and serve with waffles and ice cream.
