Rich Fruit Cake

RECIPE

Credit (Mum in Law)
500g mixed fruit
250 g soft butter
½ cup orange juice
6 eggs 3 tablespoon cooking oil
3 teaspoon baking pwdr
¾ cup sugar
3 cups flour
Vanilla essence or pineapple essence
Soak fruit wit orange juice overnight
Cream butter and sugar well
Till fluffy
beat eggs stiff add one at a tym
Beating to a creamy consistency
Add essences add fruit
Keep beating add flour gradually beat add optional
cinamon pwdr robertsons mixed spice etc
Mix thoroughly
Add chopped almonds pecans cashews optional
Bake at 150 * in a POT..lined with brown or grease proof paper for +-1hours ...plse check in case u feel its drying out ...my mil did for 3 hours
Alternatively : if u like soggy
Glaze wit ½ cup orange juice mixed with 2tblsp sugar bring to boil and pour over the cake
