Green , red, yellow peppers (large cubes)
Cherry or baby plum tomatoes
Layer all the veg in a dish
In a seperate bowl make a marinade with olive oil, parsely , lemon juice , cayenne pepper , salt to taste , garlic ( freshly ground or crushed in a garlic press),bit of paprika,res el hanout spice, dried mint , cumin (Jeeru (Cumin)) powder
Mix the marinade and pour over the preapared veg.
Bake in the oven until all the veg is cooked
