Stuffed Portobello Mushrooms

RECIPE

Wipe two portobello mushrooms with a damp cloth to clean them.Remove the brown gills and stem from the underside of the mushrooms.Brush all around with olive oil and bake at 180 degrees for 5 minutes.Set aside.Cut up: ¼ red pepper,¼ yellow pepper,¼ green pepper,¼ firm tomato and ¼ onion into fine cubes.Saute in some butter until soft.‪Mix this with 1 cup of grated cheese and salt and pepper to taste.Spoon generously into the mushrooms,top with fresh parsley and grill in an oven until cheese is melted.Eat hot!Perfect for low carb diets.Jazakallah🍄
