1 cup castor sugar
½ cup oil
Mix together
Add 4 eggs
1 at a time
1 tablespoon vanilla
Beat well
add :
1 cup flour
2 teaspoon baking powder
Add and mix until incorporated
Slowly add in ½ cup boiling water and mix
pour aprox 1 ½ soup soon batter in each papper cup in a cupcan pan
Pre heat oven to 180 degrees , bake for 20 mintes or until done .
Ganache:
1 slab milkbar/dream chocolate
2 blocks white baking choc
1 small tin nestle cream
Add the cream in a bowl and heat it in the microwave , remove add the pieces of chocolate in the cream and allow to melt, use a folk to mix .
place in the fridge
Grate fresh coconut
when the cuppies are completely cooled ,
spoon ganache over and immediately add coconut ontop .
