3 eggs
1 cup sugar
1 cup (250ml) sour cream
Beat it all together until fluffy
Add ½ cup oil ( I used canola)
Add whilst beating the mixture
2 tablespoons lemon zest (fresh)
1 tablespoon lemon essence
¼ teaspoon salt
1 ½ cup cake flour
2 teaspoons baking powder
Mix it all together
Pour into a greased loaf pan
( used spray and cook )
Bake 50 minutes
180 deg
Let it cool down once cool
Add 1 cup icing sugar into a bowl and add freshly squeezed lemon juice until the icing is smooth but not runny ..
Pour over loaf
Grate lemon zest onto icing
