90 g butter or marg
125 ml sugar
1egg
1 teaspoon vanilla essence
1 teaspoon baking powder
+-1 ½ cup flour
Beat butter and sugar well add the egg and vanilla essence
Grease a casserole
Flatten the dough
Bake for 10 minutes at 180*
remove
Topping
Whip up ½ cup apricot jam
Smear over the baked dough
Seperately beat 2 eggs with ¼ cup sugar add 1 teaspoon vanilla
Beat well then gradually add
+-1 ½ cup dessicated coconut to the egg mixture
It must not be too wet
So u can sprinkle over the jam
It will look peaky..
Sprinkle 100's & 1000's
Over
Put back in oven bake 15-20 minutes for coconut to change a creamy gold colour.
Leave to cool slightly
Cut in blocks
Keep in air tight container
and.B: you can also cut dough in rounds place in patty pans
Do the usual as above..
