INGREDIENTS
1 kg chicken fillet 1 red pepper (cut into big cubes)1 purple onion (cut into big cubes)1 teaspoon fresh ginger (grated)1 teaspoon garlic 1 teaspoon orange pepper spice1 teaspoon smoked paprika 1 teaspoon lemon pepper½ cup yogurt 1 teaspoon ground jalapeño paste 1 teaspoon kashmiri chilli powder1 teaspoon crushed chillies1 teaspoon salt¼ cup lemon juice ¼ cup coriander (chopped) + few leaves for garnish2 tablespoons olive oil 2 tablespoons butter
METHOD
Add all in ingredients into a bowl except olive oil and butter. Add in chicken and marinate over night. Add chicken into a pot, keep leftover marinade aside. Steam chicken till moisture has evaporated and thread chicken pieces onto skewers alternating with pepper and onion cubes. In a grill pan add in olive oil and butter fry chicken for a few minutes on each side and baste with leftover marinade.
Serve with tzatziki, pitas and avocado salsa
