Strawberry Kheer

Ingredients1 tablespoon solid ghee (Clarified butter)½ cup chopped strawberries½ cup strawberry puree2 teaspoon maizena (corn flour)1 tablespoon cold milk2 cups full-fat milk155g tin Nestle dessert cream½ cup sugar (to taste)½ teaspoon elachie powder½ cup broken vermicelli or ½ cup parboiled riceHandful unsalted pistachios (chopped, reserve some for garnish)Few drops rose water (optional)
Method:For vermicelli-1. Heat the ghee (Clarified butter) and fry the vermicelli for roughly 3-4 minutes, or until light gold in colour. Keep aside. 2. Mix 1 tablespoon milk and maizena (corn flour) until smooth.3. In a saucepan, heat the remaining milk, cream, sugar and elachie, until just steaming. 4. Add vermicelli to it and cook on medium heat, stirring often. The milk mixture should just start thickening, and the vermicelli should be cooked by this point.5. Add maizena (corn flour) mixture to the above milk/ vermicelli. Cook for few minutes, then take off the heat and stir in the rosewater (optional). The mixture will be quite thick at this point.6. Let it cool a bit.7. Whisk in the strawberry puree.8. Then mix in pistachios and strawberry pieces.9. You can serve the kheer just warm or cold. 10. Serve garnished with chopped pistachios & strawberries.

Let it cool a bit.7. Whisk in the strawberry puree.8. Then mix in pistachios and strawberry pieces.9. You can serve the kheer just warm or cold. 10. Serve garnished with some strawberries.
