INGREDIENTS
125g butter
2 tblspns cooking oil
2 tspns baking powder
2 tblspns castor sugar
1 beaten egg
½ teaspoon vanilla essence
2 cups flour
2 x 454g bottles fruit mincemeat
METHOD
Preheat oven to 160 degrees. Cream butter & sugar. Add oil & vanilla & mix well. Stir in beaten egg. Add baking powder & flour. Mix all together into a dough & knead well. Spread dough into a greased tray & lightly prick with a fork. Spread fruit mincemeat over dough. Repeat mixture & grate onto fruit mincemeat. Bake for approximately 30 to 40 minutes. Remove when it has risen & light brown. Dust top with icing sugar whilst hot. Cut into squares when cool. Enjoy !!!
NB: I used 1 and ½ bottles of the mincemeat. I always double the ingredients besides the fruit mincemeat as a base for the oven tray. I then use the ingredients above to grate over.
