INGREDIENTS
1 cup flour1 teaspoon bicarb1 ½ cups digestive bran½ cup fruit cake mix or ½ cup raisens or ½ cup chopped dates½ cup chopped pecans optional¾ cup muscovado sugar or brown sugar 1 egg2/3 cup milk/buttermilk ⅓ cup water½ cup oil½ teaspoon vanilla essence
METHOD
Beat liquid ingredients and egg.Fold in sifted dry ingredients, brown sugar, digestive bran and fruit. Do not over mix.Spoon into greased muffin pans. Bake in a preheated oven at 180°c for about 15min.
