INGREDIENTS
2 ½ Kg Hake or King Klip
2 teaspoon pepper
4 tablespoon lemon juice
2 teaspoon salt
1 cup flour
Marinate fish in salt, pepper and lemon juice
Batter ingredients:
2 ½ cups of flour
3 teaspoon salt 8 eggs beaten
¾ cup milk
⅓ cup water
oil for deep frying
Tartar sauce ingredient:
500 ml Mayonnaise
3 ½ tablespoon gherkins chopped
2 medium onions diced
3 ½ tablespoon chopped parsley
2 teaspoon lemon pepper
4-5 paprika
METHOD
Sift flour and salt in bowl.
Whisk eggs and milk together with the water.
Add to the flour and whisk for 2-4 minutes.
Coat fish in flour.
Dip in batter and deep fry in heated oil until golden & crisp.
Remove with a slotted spoon onto a paper towel.
Serve garnished with lemon wedges and parsley with chips and
tartar sauce.
