INGREDIENTS
-2 large or 3 medium karela (bitter gourds) (cleaned and sliced in crescents)-ghee (Clarified butter) and oil - whole jeeru (cumin)- a few curry leaves-1 medium onion (chopped)-¼ cup passata or liquidised tomato mixed with a bit of tomato purée-1 garlic-½ cup finely chopped coriander-1 ¼ teaspoon salt- crushed green chilli to taste-3 teaspoon brown sugar-dhana Jeeru (Cumin) powder-arad (Turmeric) -3 eggs whisked with 3 teaspoon milk
METHOD
1.) Heat a non stick pan, add oil, when oil is hot add karela (bitter gourds) and fry on medium heat until it’s cooked through and golden brown, remove from oil and keep aside.2.) After removing the karela (bitter gourds), add the onions, jeeru (cumin) and curry leaves until golden brown,add tomatoes and cook for 2-3 minutes then add the fried karela (bitter gourds) and all spices, mix well and cook on medium heat for 10-15mins.3.) Make an egg mixture with the milk, chopped coriander, a pinch of salt, chilli, arad (Turmeric), dhana jeeru (cumin) and garlic. Move karela (bitter gourds) to the sides of the pot, add bit of ghee (Clarified butter) in the middle then add the eggs mixture, leave to cook until it’s like an omelette and the sides of the egg move from the pot, mix everything together and scramble the egg into the karela (bitter gourds). Sprinkle brown sugar and steam on low heat for 2-3mins. Serve with roti...Enjoy❣️
