INGREDIENTS
2 tablespoon butter/ghee (Clarified butter) 1 chopped onion 1 potato (cubed) 1 large butternut (cubed)1L water 1.5 teaspoon cinnamon2 teaspoon paprika 250ml Fresh creamsalt & pepper to taste
METHOD
1) Braise onion in butter/ghee (Clarified butter) until transparent or golden brown.2) Add cubed butternut & potato to onions.3) Add the above spices & water.4) Bring water to a boil until veggies are soft. (there must only be about 1 cup of water left in the pot.5) Allow to cool before liquidizing.6) Once liquidized, pour back into pot & simmer on low heat.7) Add fresh cream, more salt & pepper (if necessary) & top with parsley once done.
