INGREDIENTS
½ white cabbage washed, and grated
½ red (purple) cabbage, washed and grated
3 carrots, washed and grated
1 raw beetroot washed, skinned removed by peeling and grated
3- 5 tablespoons mayonnaise
3 tablespoons of dark Soya sauce
½ - 1 teaspoon pepper
METHOD
This fresh creamy vegetable salad throws me back to my Rasta days,
inspired by a naturopath called Queen Efua. I have been making this
salad for years, its a take on conventional coleslaw, full of
minerals and vitamins essential while we are fasting. For an extra
healthy option, use light mayonnaise or even soya mayonnaise
available from health shops. If you suffer from high blood pressure
just 1 tablespoon of soya salt is enough as its high in salt.
Garnish and decorate with washed and finely chopped grated parsley
and enjoy!
