3 eggs 1 teaspoon vanilla essence1 cup brown sugar¾ cup cake flour¼ cup self raising flour125g butter melted and cooled250g dark chocolate melted¾ cup crunchy peanut butter¾ cup peanuts roasted and chopped into small pieces
Grease a 20 by 30 cm lamington pan , place strip of foil to cover base and extend over 2 opposite sides. Beat eggs , vanilla and sugar for 3 to 5 minutes until pale and thick. Cake flour and fold in with melted butter and peanut butter. Make sure all ingredients are cool and fold in carefully. Bake at 165 degrees for approx 20 minutes. Do not over bake . Slice while warm and then when cool drizzle chocolate. Or you can serve warm with ice cream .
