INGREDIENTS
2 tablespoon yeast2 eggs¼ cup castor sugar½ cup milk2 ½ cups flour80g soft butter½ teaspoon saltNutella (small jar)50g chopped hazelnuts (optional)
METHOD
Place the yeast and 1 tablespoon of the sugar in a bowl, add warm milk. Allow the yeast to activate for approximately 5 minutes then whisk the eggs into the milk mixture. Sift the flour, salt and remaining sugar into a mixing bowl. Pour the yeast mixture into the flour and mix, add 1 tablespoon of butter at a time. Knead the mixture until a dough has formed. Place the dough in a well greased bowl and allow to rise for approximately an hour.
Once dough has risen, punch the dough to release the air and place onto a lightly floured surface, divide the dough into four balls, (if you prefer smaller portions divide into eight).
Roll the first ball of dough until 2mls thick. Spread a generous amount of Nutella over the dough. Sprinkle with hazelnuts. Roll the dough tightly into a log and slice it lengthwise to expose the layers of Nutella and brioche. Then twist the dough to form a braid and pinch at the ends. Place on your baking tray. Do the same for your remainder dough. Leave to rest for another 30mins. Lightly brush with egg wash ( 1 egg and 1 tablespoon milk).
Bake at 180 degrees for 15-20 minutes until golden brown .
