Jalebi
1 cup Self Raising flour
2 drops of yellow food
colour
Cold water to mix (for the
batter)
3 cups sugar
11/2 glass water (for the
syrup)
Make the syrup with sugar &
water & let it cool
completely. It should be
thick, only then the jalebi get
its proper taste.
Mix flour,food colouring &
COLD water. It will start
turning very sticky like a
glue, keep mixing strongly
with a whisker till the batter
is very creamy but not
runny.
Heat the oil, fill in the icing
device & go in round
motions with it dropping it
in the oil to make the.
“wheel” like form of jalebi .
Dont fry for too long, as the
colour changes to a light
brownish orange take it out
& put it directly into the
syrup BUT take it out again
immediately after 4-5
seconds!! If it stays in the
syrup for too long then it
will become very soggy. To
have it crunchy you have to
hurry, place them on a
cooling wire so that the extra
syrup runs out, dont cover
them, they will stay crunchy.
