INGREDIENTS
2 cups self raising flour
1 cup sugar
2 eggs
2 egg whites
1 tablespoon orange zest (finely grated)
½ teaspoon vanilla essence
½ cup pistachio shelled
Pinch of salt
METHOD
Sift flour, sugar and salt, whisk together the eggs, egg whites
orange zest and vanilla extract. Mix the egg mixture into the
flour mixture and make a smooth dough. Divide into 2 portions
and roll into 5 cm thick logs, flatten slightly and place 10 cm
apart on a baking tray. Bake for 30 minutes remove and set aside
to cool, reduce oven to 150. Cut the cooled logs into 1cm
slices, place the cut sides down onto a greased baking tray
and bake for 10 minutes.
Put it back in the oven at 75deg for 4 hours and turn after 2.
