INGREDIENTS
150ml fresh Milk 75g butter ½ teaspoon. Vanilla 2 teaspoon. Yeast 75g caster sugar + for coating 425g plain flour + for dusting ½ teaspoon. Salt 2 eggs Oil for frying 250g jam
METHOD
Heat the milk, butter, and vanilla in a sauce pan over a medium heat, until combined. Cool to lukewarm and whisk in the yeast and 1 tablespoon. Sugar. Cover and leave for 10 minutes. Sift the flour, salt, and the remaining sugar into a large bowl. Whisk the eggs into the cooled milk mixture until combined.Make a well in the center of the dry ingredients. Pour in the milk and bring together to form a dough on a floured surface, knead the dough for 10 minutes, until soft.Transfer to a greased bowl, cover with cling flim and leave in a warm place for 2 hrs, to rise On a floured surface, knock back until smooth. Divide it into 12 portions and shape into balls.Place them on a non stick baking sheet, spaced apart and cover with cling flim and a kitchen towel. Rest the balls in a warm place for 1 - 2 hrs. Until double in size. Heat the oil and fry for 1 minutes each size. Roll doughnuts in sugar while still hot. Place the jam in a piping bag and pipe into the doughnut center.
