INGREDIENTS
50g butter 100g sugar + extra for coating 1 egg 250g flour 3 teaspoon. Baking powder 1 teaspoon. Lemon juice 1 teaspoon. Vanilla
METHOD
Cream together butter and sugar till light and creamy. Agg in the egg and beat well till combined. In a bowl add flour and baking powder mix with a fork and add to the cream mixture. Mix on low speed for 20 sec and add in the lemon juice and vanilla and knead using your hand till it forms a dough. Form a golf ball size ball, flatten it using your palm. Dip one side in water then in sugar and place on a prepared baking tray with parchment paper and bake @ 180c for 20min or till slightly brown.Enjoy
INFO & TIPS
After creaming the butter and sugar try to avoid using a beater
