Easy Varki/ Warki/ Mitha/ Mithi/ Sweet Samosa

INGREDIENTS

2 cups coconut (fresh or dessicated, I prefer freshly frozen)¾ cup ghee (Clarified butter)1 cup crushed almonds1 cup crushed pistachios 1 cup white sugar (granulated)1 ½ teaspoon Elachi (cardomom) powder (can add more to your taste if you prefer)1 x 170g tin of evaporated milk3 teaspoon condensed milkPhyllo/ filo pastry Melted butter for brushing pastryOil for frying

METHOD

1.) Melt ghee (Clarified butter) on medium heat, add coconut and continue to cook on medium to low heat until golden brown (stir frequently while cooking and continuously when it starts to brown as it burns easily - switch heat to low when it starts to brown).2.) Remove from stove, leave to cool then add almonds, pistachios, sugar, evaporated milk, Elachi (cardomom) and condensed milk - mix well and leave in the fridge for 2-3 hours or overnight.3.) Cut pastry into small squares, layer 7 sheets and brush melted butter inbetween each layer. Place filling in the middle, brush the edges with more melted butter, fold over Into a triangle - seal the edges and corners by pressing.4.) Place in the freezer for 2-3 hours or 2-3weeks (until you need to fry them - these are best if you fry them a day or 2 before eid).5.) Fry in medium hot oil, place on kitchen tissue to drain excess oil. Serve with a cup of tea or eid milk.

INFO & TIPS

You could air-fry or bake these but some things taste better and more authentic when deep fried 🥰🤲🏽♥️
