INGREDIENTS
1 ½ cups pea dhal(pulse should be freshly stocked) 1 teaspoons freshly ground red crushed chillies 1 teaspoon baking powder 2 Tablespoons gram flour or cake flour 1 teaspoon crushed ginger garlic paste Seasonings salt and pepper 3 green chillies chopped in rings. 1 teaspoon freshly roasted crushed dhania (coriander) 1 teaspoons freshly roasted crushed jeeru (cumin) ½ teaspoon red chill powder¼ teaspoon tumeric powder1 large onion chopped or grated ½ bunch freshly chopped dhania (coriander)Handful spring onions chopped 1 sprig fresh curry leave.
METHOD
Wash and soak pea dhall (lentils) overnight. Rinse out and grind the dhal in a food processor /blender.
Chop onion or grate remove excess water. Prepare the greens chop and set aside.
In a bowl, add your processed dhal, salt pepper, spices, pastes, greens, grated or chopped onions and green chillies. Mix, avoid over handling now form round ball, flatten out a little adjusting to a size of a patty on the palm of your hand use plastic gloves and slide into pre heated oil.
Fry these in pre heated oil, on medium heat, use a slotted spoon to flip over, until they golden brown in colour, crunchy outter and yummy inside.
