INGREDIENTS
1kg mutton pieces 2 teaspoon cumin seeds4 bay leaves2 onions fines chopped2 green chillies1/3 Cup oil2 tablespoon ghee (Clarified butter)3 teaspoon ginger garlic masala1 teaspoon turmeric 2 teaspoon chillie powder2 teaspoon kashmiri chillies1 teaspoon crushed chillies1 teaspoon cumin/coriander spice1 teaspoon garam masalaSalt to taste4 tomatoes grated1 teaspoon sugar2 tablespoon tomato paste1 teaspoon vinegar1/2 Cup yoghurt1 teaspoon Methi (Fenugreek) masala (optional)
METHOD
Braise onion in oil oil ghee (Clarified butter) with cumin, green chillies and bay leavesAdd masala and spices and cook for 1 minute, then add in tomatoes and sugar and cook for 15minsAdd your mutton, yoghurt, vinegar, Methi (Fenugreek) and tomato pasteCook until meat is tender and oil has surfacedGarnish with fresh chopped green dhania (coriander)

Serve with naan/roti/puri and a side salad and chips or potato wedges
