INGREDIENTS
8 egg Whites
2 Cups Sugar
1 teaspoon Vanilla
1 teaspoon Cream of tartar
METHOD
Place egg whites, sugar and cream of tartar in a
heatproof dish over a double boiler, and whisk
until all the sugar is dissolved, and the egg
whites are warm to the touch (3-4 minutes)
Transfer to bowl of stand mixer and beat well
with whisk attachment until glossy firm peaks
form.
Colour to choice

Use immediately, do not make in advance, as it
goes mucky and sticky when left to stand
